喝鲜奶保质期越短越好
前市场上销售的各种牛奶因为都经过了消毒或高温处理，根据国家质检总局的有关规定，从今年10月1日起，都将不得再标注“鲜”字，也就是说，“鲜”牛奶将从市场上消失。那么，喜爱喝鲜牛奶的人们该怎么办呢？
牛奶还是鲜的好
牛奶营养丰富，富含各种维生素和钙、硒、镁等微量元素，并具有美容养颜和镇静安神的作用，因而越来越受到人们的喜爱。
近年来，我国人均奶制品的消费量直线上升。1997年，我国人均消费奶制品仅有2公斤，到2004年这一数字就增长到了12公斤。
在追求健康生活的今天，“鲜”字无疑在人们的食品消费中扮演着越来越重要的角色。鸡鸭鱼肉要买现宰的，蔬菜水果要吃当天采摘的，粮食要吃当年的，当然，喝牛奶也要喝鲜的。
要是倒推30年，想喝鲜牛奶不是一件什么难事，因为那时只有牛奶公司送奶上门的一种瓶装奶。那时的牛奶，都是牛奶公司把刚挤的牛奶装瓶后凌晨送到订户家门口，订奶的人一般都是早饭时就喝了。从牛奶被挤出来到人们喝进肚子里不过几个小时，那真是再新鲜不过了。可是现在超市里的牛奶琳琅满目，各种包装、各种名称的牛奶令人眼花缭乱，什么鲜牛奶、纯鲜牛奶、特品纯鲜牛奶、加钙鲜牛奶等等，不一而足，可是这些 “鲜牛奶”中大多数的“鲜”字应该被打上一个大大的问号。

保质期短的牛奶更鲜
生鲜牛奶自然是营养最丰富最全面的。在许多发达国家，未经杀菌的生鲜牛奶是最受消费者欢迎的，但价格也最为昂贵。可是目前，生活在大城市里的居民很难买到生鲜牛奶。只能退而求其次，选购尽可能新鲜的牛奶。
目前，市场上销售的牛奶，其杀菌方式主要有两种，一是低温巴氏消毒奶，通常指将生奶加热到72℃至85℃，瞬间杀死致病微生物，而保留有益菌群。优点是对牛奶营养物质破坏少，充分保持牛奶的鲜度，缺点是只能低温保存，保存时间只有48小时左右。另一种是高温杀菌奶，是在135℃到150℃下对牛奶进行4至15秒的瞬间杀菌处理，完全破坏其中可生长的微生物和芽孢。优点是常温下可保存30天以上，缺点是高温下破坏了牛奶所含的许多营养物质。
煮过牛奶的人都知道，煮牛奶要用小火，煮到牛奶冒气泡即可，不能煮沸，以免牛奶的营养成分遭到破坏。了解了这一点，在选购更鲜的牛奶时就游刃有余了。
因此，不管市场上销售的牛奶是用什么包装的，也不管包装上写的是不是“鲜牛奶”，只要看看包装上注明的保质期是长是短就能知道哪种牛奶更新鲜了。
此外，在选购鲜牛奶时还可以仔细看包装上的配料表。低温消毒奶的配料表上一般只有牛奶一项，而高温灭菌奶的配料表上往往注明含有牛奶和奶粉两项。哪种牛奶更新鲜一目了然。
